Red Lion Spicy Foods Logo 20 Pepper Brisket

1 3 to 4 lb. trimmed whole beef brisket
2 tbs. vegetable oil
4 tbs. Red Lion Spicy Foods Company Original Dry Rub
6-8 cloves Red Lion Spicy Foods Company 20 Pepper Garlic - sliced thin
2 leeks - cleaned and sliced thin
2 stalks celery - sliced thickly
1 large red sweet pepper - thick julienne sliced
1 jar Red Lion Spicy Foods Company 20 Pepper Salsa
1 can chicken broth

 

Trim visible fat from brisket. Brush brisket with oil, then sprinkle liberally with rub.
Cut slits into brisket and put in garlic cloves.
Pre-heat a cast iron skillet over medium heat. When hot, brush a little more oil on the skillet.
Sear the brisket until browned on both sides, about 5 minutes per side.
Place all other ingredients in a large crock pot, then top with the brisket.
Cover and set the crock pot on Low. Cook for 8 hours, then remove the brisket
to a plate to cool. Skim fat off liquid.
Slice brisket thinly and serve over mashed potatoes or noodles. Top with the sauce.
