Red Lion Spicy Foods Logo 5 Pepper Vegetarian Chili

 

1 tablespoon olive oil
1 large white onion, chopped
2 cloves garlic, minced
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1/2 teaspoon mustard seeds
1 28 oz. can crushed tomatoes
1 14.5 oz. can light red kidney beans, drained
1 14.5 oz. can pinto beans, drained
1 cup sliced mushrooms
2 carrots, peeled and chopped
3 jalapeno chiles, seeded and minced
3 green chiles (Anaheim or New Mexican), roasted, peeled, seeded and diced
(substitute canned green chiles if fresh are not available.)
3 tablespoons Red Lion Spicy Foods Competition Blend chili powder
2 teaspoons ground cumin
1/4 teaspoon unsweetened baking chocolate
1/8 teaspoon ground cinnamon

 

In a large, heavy pot, heat the oil over medium-high heat. Add the onion, garlic and bell peppers.
Cook until the onion is soft, about 5 minutes.
Add tomatoes, kidney beans, pinto beans, mushrooms, carrots, jalapeno, green chile, chili powder,
cumin, chocolate and cinnamon. Stir well.
Bring to a boil, reduce heat and simmer uncovered for 40 minutes, stirring occasionally.
