Red Lion Spicy Foods Logo Beef and Bison Chili

 

2 lbs. ground bison
1 lb. 80/20 ground beef
Salt and Pepper to taste
1 medium yellow onion, diced
1 large green bell pepper, diced
3 cloves garlic, minced
2 14.5 oz. cans fire-roasted diced tomatoes 1 14.5 oz. can beef broth
1 jar Red Lion SPicy Foods 20 Pepper Mild Salsa With Black Beans
1 package Red Lion Spicy Foods Zany Chili Mix
1 tbsp. cumin
1 15.5 oz. can dark red kidney beans, reserve liquid
1 15.5 oz. can pinto beans, drained
1 tbsp. yellow corn meal

 

In a large, heavy pot, season the bison and beef with salt and pepper. Cook over medium-high
until browned. Drain, reserving 1 tbsp. of the fat. Add the reserved fat to the pot, and
cook the vegetables over medium-high heat for 5 minutes.
Add the tomatoes, beef broth and salsa, and bring to a boil. Add the chili powder and stir well.
Return the meat to the pot, reduce heat to low and simmer 2 hours.
Add the cumin and the beans.Simmer 30 minutes.
Combine the reserved bean liquid with the corn meal, and add to the pot. Simmer an additional
15 minutes and serve.
