Red Lion Spicy Foods Logo Beef And Pork Chili

 

2 lbs. chuck shoulder roast, cut into 1/2 inch cubes
1 lb. ground pork
2 large white onions, chopped
4 cloves garlic, minced
7 tablespoons Red Lion Spicy Foods Competition Blend chili powder
3 green chiles (Anaheim or New Mexican) roasted, peeled, seeded and diced
3 15 oz. cans whole tomatoes
1 6 oz. can tomato paste
4 bay leaves
1 tablespoon kosher salt
1 tablespoon Mexican oregano
1 tablespoon red wine vinegar
1 tablespoon brown sugar
2 15 oz. cans dark red kidney beans

 

In a large pot, brown beef and pork with the onion and garlic. Drain and return to pot.
Over medium heat, stir in chili powder, green chiles, tomatoes, tomato paste, salt,
oregano, red wine vinegar, brown sugar and bay leaves.
Bring to a boil. Reduce heat to low and simmer, covered, for 2 hours.
Add kidney beans and their liquid, cook an additional 30 minutes.
