||Better Than Hot Quesadilla
2 corn tortillas
2 tbsp. Red Lion Spicy Foods Company Serrano Red Salsa
1/2 scallion - chopped
2 slices onion - separated into rings
2 slices tomato - chopped
1 slice Yves Veggie Canadian Bacon
3 tbsp. shredded cheddar cheese
Spread the salsa on one tortilla, leaving about 1/4 inch edging.
Top with the rest of the ingredients - scallion, onion, tomatoes and Canadian bacon.
Then top with the cheese. Cover with the second tortilla.
Preheat George Foreman Grill, or other electric grill or grill pan.
When hot, spray top of quesadilla with cooking spray. Place on grill.
Cover and cook for 5 minutes until crispy and cheese is bubbly.
Cut into quarters and serve garnished with a dollop of sour cream and
a dollop of Red Lion Spicy Foods Company Serrano Red Salsa.
Makes 1 serving.
