4 1/2 lb. filets of Halibut, Cod, Tilapia or other white, flaky fish
2 limes, sliced into rings
1/4 cup extra virgin olive oil, divided
1 medium onion, thinly sliced
10-12 cloves Red Lion Spicy Foods 20 Pepper Garlic, coarsely chopped
1 tbs. Italian flat leaf parsley, minced
1 cup pitted green olives, preferably Manzanillo
1/4 cup capers
1 cup pickled Jalapenos, coarsely chopped
1/2 cup dry white wine
Salt and pepper to taste
Line a casserole dish with aluminum foil. Drizzle a small amount of oil on the foil to coat.
Lay several slices of lime in the bottom of the dish, and top with the fish. Place remaining
lime slices on the fish, top with the remaining ingredients and season with salt and pepper.
Cook in a 350 degree oven for 25-30 minutes, depending on the thickness of the filets.
Place each filet on a plate, spoon on sauce from the dish and serve.
