Red Lion Spicy Foods Logo Foggy Mind Chili

 

2 lbs. chili grind beef (substitute ground beef if chili grind is not available)
4 lbs. bottom round roast, cut into 1/2 inch cubes
4 pieces bacon, diced
1 32 oz. can crushed tomatoes
1 8 oz. can tomato sauce
1 6 oz. can tomato paste
2 medium white onions, minced
6 stalks celery, minced
2 large red bell peppers, minced
6 cloves garlic, minced
1/2 cup Jack Daniels whiskey
2 14.5 oz. cans beef broth
1 14.5 oz. can chicken broth
2 32 oz. cans pinto beans, drained
2 packages Red Lion Spicy Foods Best Batch Chili Mix (Zesty, Zippy or Zany), divided

 

In a large stock pot, cook the bacon until crisp. Remove the bacon, leaving the fat
in the pot. Add the ground beef, diced beef and 2 TBS. of the chili powder.
Brown the meat, drain and set aside. Add vegetables and sweat until the onions are
translucent, about 10 minutes. Add the meat, tomatoes, tomato sauce, tomato paste,
beef broth, chicken broth and all but 2 TBS. of the chili powder. Bring to a boil,
reduce heat to a simmer, and cook for 1 hour.
Add whiskey and cook for an additional 1 hour
Add the beans and the last 2 TBS. of chili powder, cook for 30 minutes or until a spoon stands up in the pot.
Serve with diced scallions, and topped with melted cheddar cheese.
