Red Lion Spicy Foods Logo Great Bowl Of Fire Chili

 

3 lbs. diced beef (chuck tender or tri-tip)
2 slices slab bacon, diced
1 8 oz. can tomato sauce (preferably El Pato)
1 14 oz. can of chicken stock
1 14 oz. can of beef stock
1 large yellow onion (finely minced)
2 tbs. ground cumin
1 package Red Lion Spicy Foods Company XX Hot Chili Powder

 

In a large, heavy pot, render the bacon until crisp, then add meat.
On low heat, cook until the meat is brown (about 10 minutes).
Remove the meat from the pot and drain.
Add the tomato sauce, stock, onion and chili powder to the pot and stir to blend.
Add the meat back to the pot. Simmer for 90 minutes, then add the cumin.
Simmer an additional 20 minutes until the meat is tender.

 

Serve with diced onions, pickled jalapenos, and pinto beans on the side.
