Red Lion Spicy Foods Logo Heat Creeper Chili

 

3 lbs. ground beef, chili grind if available
1 lb. Hot Italian sausage, casing removed
1 32 oz. can crushed tomatoes
1 6 oz. can tomato paste
1 large yellow onion, diced
6 stalks celery, diced
2 large red bell pepper, diced
2 12 oz. bottles of beer
1 14.5 oz. can beef stock
1 32 oz. can light red kidney beans
1 package Red Lion Spicy Foods XX Hot Chili Powder
6 TBS. package Red Lion Spicy Foods Company Competition Blend Chili Powder

 

Brown ground beef and sausage in a large pot, breaking up the sausage as it browns.
Drain off the fat,reserving one tablespoon.
Put fat back into the pot and add vegetables. Cook vegetables until tender, about 5 minutes.
Add all other ingredients except the beans. Bring to a boil, reduce heat and simmer for one hour.
Drain the beans and add to the pot. Simmer an additional two to three hours.

 

Makes about 12 cups, and freezes very well!
