Red Lion Spicy Foods Logo Low Carb Chili #1

 

2 lbs. ground beef
2 pieces pepper bacon, minced
1 2 lb. top round London Broil, cut into 1/4 inch pieces (freezing for an hour helps cutting)
1 small yellow onion, chopped fine
1 large Poblano chile, chopped fine (green or red bell pepper can be substituted)
4 stalks celery, chopped fine
1 14.5 oz. can beef broth
1 14.5 oz. can chicken broth
1 8 oz. can El Pato tomato sauce
1 package Red Lion Spicy Foods Chili Mix - Zesty, Zippy or Zany - divided

 

Brown ground beef over medium-high heat, drain and set aside.
Add bacon to pot, heat to medium. Cook until bacon is crisp and add onion, celery and peppers.
Cook until soft, about 6 minutes. Stir in diced meat, a little bit at a time, with 2 tablespoons of chili powder.
When browned, add reserved ground beef, beef and chicken broth, tomato sauce and 4 tablespoons chili powder.
Bring to a boil, lower heat and simmer for 2 hours, stirring occasionally.
Add remaining 2 tablespoons of chili powder. Simmer for an additional 30 minutes, and serve with shredded cheddar cheese.

 

Makes 12 servings of 1/2 cup each. Approximately 5 grams carbs per serving.
