Red Lion Spicy Foods Logo Mid Week Chili

 

2 lb. ground beef, use chili grind if available
1 lb. pork sausage
2 slices slab bacon, finely diced
1 8 oz. can tomato sauce
2 cups chicken broth
2 cups beef broth
1 large yellow onion, coarsely chopped
1 red pepper, coarsely chopped
2 4 oz. cans green chiles, diced
2 28 oz. cans small red beans
1 2.25 oz. package Red Lion Spicy Foods Zany Chili Mix

 

Render bacon in a Dutch Oven until crisp, remove and reserve.
Add the sausage to the pot, breaking it into small pieces As it browns.
Add the beef and brown both, then remove from pot and drain.
While the meat is browning, put celery, red pepper and onion in a blender
or food processor and puree to a smooth liquid. Add the puree to the pot.
Add the tomato sauce, chicken broth, beef broth and chili mix,
and simmer over low heat for 1 1/2 hours.
Add the beans, reserved bacon and green chiles, simmer an additional 45 minutes.

 

Serve with flour tortillas, scallions and cheddar cheese.
