Red Lion Spicy Foods Logo Nor'easter Chili

 

1 large Vidalia onion, chopped fine
2 14 oz. cans beef broth
2 14 oz. cans chicken broth
1 14 oz. can diced tomatoes with green chiles
2 8 oz. cans El Pato tomato sauce (available at Wal-Mart)
2 32 oz. cans black beans, drained and rinsed
1 4 oz. can whole green chiles, diced
8 TBS. Red Lion Spicy Foods Competition Blend Chili Mix, divided 6 TBS. and 2 TBS.
3 lb. ground turkey
1 lb. Cajun sausage, removed from casing
1 lb. Hot Italian sausage, removed from casing
2 TBS. olive oil
2 TBS. red wine vinegar

 

Brown turkey and sausage over medium-high heat, drain and set aside.
Add olive oil to the pot, heat to medium, add the onion and chiles. Cook until soft, about 6 minutes.
Add the tomatoes, tomato sauce, broth, vinegar, browned meat and 6 TBS. of the chili powder.
Bring to a boil, lower heat to a simmer and cook for 2 hours, stirring occasionally.
Add beans and remaining 2 TBS. of chili powder. Simmer an additional 30 minutes.
Serve over brown rice with fresh cilantro and sour cream.

 

Makes about 12 servings.
