Red Lion Spicy Foods Logo Rainy Day Chili

 

3 lbs. chili grind ground beef* (if available)
2 slices of slab bacon, finely diced
1 8 oz. can tomato sauce
2 10 oz. cans Rotel diced tomatoes
2 cups beef stock
1 large yellow onion, diced
1 red bell pepper, diced
4 cloves garlic, minced
8 oz. tomato juice
2 28 oz. cans dark red kidney beans
2 TBS. cumin
4 oz. Red Lion Spicy Foods Competition Blend Chili Powder

 

Render bacon in a Dutch Oven until crisp, then add the beef and brown.
Remove meat from the pot and drain. Reserve 2 TBS. of the fat. Put the fat
back into the pot and bring heat up to medium. Add the vegetables and cook
until the onions are translucent, about 5 minutes. Add the tomato sauce, tomatoes,
juice, stock, meat and chili powder to the pot, and bring to a boil. Reduce heat to
low and simmer for 90 minutes. Add the beans and cumin, and simmer an additional 45
minutes. Serve with flour tortillas, scallions and cheddar cheese.

 

*Most grocery stores and butcher shops can do chili grind. It's ground beef that is
run through the largest hole on the meat grinder. Just ask!
