||Red Lion Spicy Chicken
2 lbs. chicken tenders (pre-cooked breaded tenders or you can make your own)
1 jar Red Lion Spicy Foods 20 Pepper Salsa (mild, hot or extra hot)
1 package shredded Mexican cheese blend
Cook the chicken. If using pre-cooked and breaded tenders, follow the package directions. If using fresh chicken tenders,
dredge in beaten egg and Italian bread crumbs and fry in hot oil until cooked through.
Put 3/4 of the jar of salsa into a casserole dish. Place the chicken in the salsa, top with the rest of the salsa
and the cheese. Place tortilla chips around the edge of the dish, crumbled tortilla chips can be sprinkled on top for
extra crunch. Bake at 350 until bubbly and heated through, about 15-20 minutes.
