Red Lion Spicy Foods Logo Reduced Fat Chili

 

1 teaspoon peanut oil
2 cups onion, diced fine
6 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
2 lbs. extra lean ground beef
2 tsp. paprika
2 tsp. ground cumin
5 tbs. Red Lion Spicy Foods Company Chili Mix (Zippy, Zesty or Zany, depending on how hot you like it.)
56 oz. canned diced tomatoes with green chiles
28 oz. fat free beef broth
1 tbs. beef bouillon granules
28 oz. canned pinto beans, drained

 

Combine paprika, cumin and chili powder.
In a heavy stock pot, heat oil over medium heat. Add onion, garlic and peppers, saute for 5 minutes.
In a separate skillet, brown the beef. Drain off fat.
Add beef to the stock pot, sprinkle with 1/2 of paprika, cumin and chili powder mixture.
Cook for 5 minutes, stirring frequently.
Stir in the tomatoes, broth, beef granules and remaining spice mixture.
Bring to a boil. Reduce heat, partially cover and simmer for 2 hours.
Add beans and simmer for an additional 30 minutes.

 

Makes 14 1 cup servings. 9g fat per serving.
