Red Lion Spicy Foods Logo Silent Alarm Chili

 

2 lbs. bottom round beef, diced
1 lb. ground beef
1 lb. ground pork
2 8 oz. cans tomato sauce
1 32 oz. can diced tomatoes
1 10.5 oz. can chicken broth
2 10.5 oz. can beef broth
1 large sweet onion, diced
2 large red bell peppers, diced
6 stalks celery, diced
1 32 oz. can light red kidney beans
1 32 oz. can pink beans
10 tbs. Red Lion Spicy Foods Competition Blend Chili Powder, divided 1 tbs., 7 tbs., 2 tbs.
2 tbs. cumin

 

Brown the beef and pork, with 1 tbs. of the chili powder, in a large pot for about 15 minutes.
Remove the meat form the pot and drain. Return 2 tbs. of the fat to the pot. Add the vegetables
and cook until the onions are soft, about 10 minutes. Add the tomato sauce, diced tomatoes, broth
and 7 tbs. of the chili powder. Simmer over low heat for 90 minutes. Add 2 tbs. of the chili powder,
the cumin and the beans. Simmer for an additional 45 minutes. Add additional broth if chili
becomes too thick. Season with salt if necessary.

 

Serve with flour tortillas, scallions, cheddar cheese and pickled jalapenos.
