Red Lion Spicy Foods Logo Smokestack Chili

 

2 lb. bottom round roast, diced
1 lb. pork chop, diced
2 lb. ground beef (chili grind if available) 2 slices slab bacon, finely diced
1 28 oz. can tomato puree
1 7.5 oz. can chipotles in adobo sauce
1 14.5 oz. can chicken broth
1 14.5 oz. can beef broth
1 large yellow onion, coarsely chopped
4 jalapeno chiles, coarsely chopped
6 cloves garlic, minced
1 large red bell pepper, coarsely chopped
1 28 oz. cans pinto beans, drained and rinsed
10 tbs. Red Lion Spicy Foods Competition Blend Chili Powder- divided 1 Tbs., 7 Tbs., 2 Tbs.

 

Cook beef, pork , bacon and 1 tbs. of the chili powder in a large pot over medium heat until browned (about 10 minutes).
Drain meat and return to the pot. While the meat is cooking put jalapenos, red bell pepper, onion, garlic and chipotles
(with sauce) in a blender or food processor and puree until smooth. Add vegetable puree to the pot.
Add tomato puree, chicken broth, beef broth and 7 tbs. of the chili powder. Simmer on low heat for 90 minutes.
Add the beans and the remaining 2 tbs. of the chili powder, and simmer for 45 minutes.
Adjust for salt, and serve with flour tortillas, scallions and cheddar cheese.
