Red Lion Spicy Foods Logo Smoky Bison Chili

 

2 tbsp. vegetable oil
1 large red onion, chopped
1 large red bell pepper, diced
1 cup diced celery
1 tbsp. minced garlic
1 package Red Lion Spicy Foods Zany Chili Mix
1 tbsp. ground cumin
1 tsp. Mexican oregano
1 tsp. ground coriander seed
2 lbs. ground bison
2 14.5 oz. cans diced tomatoes with chipotles
1 15 oz. can tomato sauce
1 14.5 oz. can beef broth
2 chipotle chiles
2 15.5 oz. cans pinto beans, reserve the liquid from 1 can
1 tbsp. yellow corn meal

 

Put the oil into a heavy 8 qt. or larger pot, and heat over medium-high until shimmering.
Add the vegetables and cook for about 5 minutes, until the onions soften.
While the vegetables are cooking combine the chili powder, cumin, Mexican oregano and
coriander. Add the combined spices to the pot with the vegetables, and cook for 1 to 2
minutes. Add the ground bison and cook for 10 minutes, stirring occasionally and breaking
up any clumps. Add the tomatoes, tomato sauce, broth and chipotles. Bring to a boil, then
reduce heat and simmer, covered, for 90 minutes, stirring occasionally.
Mix the corn meal with the reserved bean liquid, and stir into the chili.
Add the beans and simmer, partially covered, for an additional 30 minutes.
Remove the chipotles and serve.
