Red Lion Spicy Foods Logo South Of The Border Chili

 

3 lbs. top round beef, diced
1 lb. boneless pork ribs, diced
1 lb. chorizo, cooked then diced
2 slices of slab bacon, finely diced
1 8 oz. can tomato sauce
1 14.5 oz. can chicken broth
1 14.5 oz. can beef broth
1 large sweet onion, minced
1 shot tequila
8 tbs. Red Lion Spicy Foods Company Competition Blend Chili Mix, divided
2 tbs. cumin

 

In a large pot, render the bacon, then add the beef, pork and 1 tablespoon of the chili mix.
Cook over medium heat until the meat is browned, about 10 minutes.
Remove meat from the pot and drain. Add onion and cook onion until soft.
Return meat to the pot. Add the tomato sauce, broth, tequila and 5 tablespoons
of the chili mix. Reduce heat to low and simmer for 90 minutes.
Add the remaining 2 tablespoons of the chili mix, and the cumin.
Simmer for an additional 45 minutes. Add additional broth to adjust consistency,
and season with salt, if necessary.
Serve with flour tortillas, scallions, cheddar cheese and pickled jalapenos.
