Red Lion Spicy Foods Logo Sunday In Texas Chili

 

2 lb. smoked beef brisket, diced
2 lb. ground beef, (chili grind if available)
2 slices slab bacon, finely diced
2 15 oz. cans diced tomatoes
2 8 oz. cans tomato sauce
1 14.5 oz. can chicken broth
2 14.5 oz. cans beef broth
1 large yellow onion, finely diced
4 jalapeno chiles, finely diced
6 cloves garlic, minced
2 large Poblano chiles, finely diced
4 stalks celery, finely diced
2 28 oz. cans pinto beans, drained and rinsed
10 tbs. Red Lion Spicy Foods Chili Mix - Zesty, Zippy or Zany - divided 1 Tbs., 7 Tbs., 2 Tbs.

 

Cook ground beef, bacon and 1 tbs. of the chili mix in a large pot over medium heat until browned (about 10 minutes).
Drain meat and set aside. Sweat the vegetables over medium heat until the onions are translucent.
Add the tomatoes, tomato sauce, broth, reserved ground beef and 7 tbs. of the chili mix to the pot.
Simmer on low heat for 1 hour. Add the diced brisket, and simmer on low heat for an additional 1 hour.
Add the beans and the remaining 2 tbs. of the chili mix, and simmer for 30 minutes.
Adjust for salt, and serve with flour tortillas, sour cream and pickled jalapenos.
