Red Lion Spicy Foods Logo Tex Mex Chili

 

3 lbs. Chili grind beef (ground beef can be substituted)
1 lb. Chorizo, cooked then diced
2 slices slab bacon, finely diced
1 8 oz. can tomato sauce
1 10 oz. can red enchilada sauce
1 3 oz. can diced jalapenos
1 14.5 oz. can beef broth
1 14.5 oz. can chicken broth
1 large sweet onion, minced
1 large red pepper, diced
6 stalks celery, diced
2 large cans Pinto beans
2 whole fresh serrano chiles, pierced
8 tbsp. Red Lion Spicy Foods Company Competition Blend Chili Powder, divided 1, then 5, then 2
2 tbsp. cumin

 

Render bacon in a large pot over medium heat, then add the beef and chorizo and 1 tbsp. of the chili powder.
Cook until browned, about 10 minutes. Remove meat from pot and drain.
Add the tomato sauce, enchilada sauce, broths, vegetables and 5 tbsp. of the chili powder to the pot and simmer on low heat
for 90 minutes.
Add 2 tbsp. of the chili powder and the cumin, and simmer an additional 45 minutes.
Add additional broth if too thick, season with salt if necessary.
Serve with flour tortillas, scallions, cheddar cheese and pickled jalapenos.
