Red Lion Spicy Foods Logo Thai One On Chili


3 lbs. ground beef
1 medium red onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
3 Jalapeno chiles, diced
3 Thai chiles, whole and pierced
1 cove garlic,minced
1 8 oz. can tomato sauce
2 15 oz. cans fire-roasted diced tomatoes
1 14.5 oz. can beef broth
8 TBS. Red Lion Spicy Foods Competition Blend Chili Powder, divided 7 TBS and 1 TBS
2 tsp salt, divided 1 tsp and 1 tsp
1/2 tsp ground black pepper
1 TBS cumin
2 tsp. dried cilantro
Juice from 1 lime
3 15 oz. cans light red kidney beans


In a large pot, season the ground beef with 1 tsp salt, pepper and 1 TBS chili powder, and brown
over medium heat. Remove from the pot and drain, reserve 1 TBS of fat. Add reserved fat to the pot.
Add the onion, bell peppers and garlic. Cook over medium heat for 5 minutes. Add the diced tomatoes,
tomato sauce, beef broth and jalapeno. Bring to a boil, add remaining 7 TBS of chili powder, cumin and
and the Thai chiles. Stir well and return the meat tot he pot. Reduce heat and simmer 2 hours.


Remove the Thai chiles from the pot. Using a small mesh strainer and a spoon, smash the chiles and
drain the liquid into the pot. Add the cilantro and lime juice. Stir to mix well.
Add the beans, stir well and simmer for an additional 30 minutes.


Serve with flour tortillas, scallions, cheddar cheese and pickled jalapenos.
