Red Lion Spicy Foods Logo Vegetarian Chili

 

6 large carrots, diced
1 large green pepper, diced
2 large red peppers, diced
2 medium zucchini, diced
1 lb. white mushrooms, diced
2 medium yellow onions, diced
6 stalks celery, diced
1 28 oz. can diced tomatoes
2 8 oz. cans tomato sauce
1 6 oz. can tomato paste
4 14.5 oz. cans vegetable stock
1 16 oz. bag frozen yellow corn
2 12 oz. cans light red kidney beans
2 12 oz. cans black beans
3 12 oz. cans white beans
1/2 lb. textured vegetable protein (available at health food stores)
2 bay leaves
1 package Red Lion Spicy Foods Company Chili Mix - Zesty, Zippy or Zany
2 tbs. vegetable oil

 

Heat oil in a large pot. Add all vegetables and saute over medium heat for 10 minutes,
stirring frequently. Add tomato products, bay leaves, Chili Mix, textured vegetable protein,
broth and bring to a boil. Reduce heat and simmer for one hour. Add water to cover, as needed.
Add beans and corn, continue a slow simmer for two more hours.

 

Makes about 16 servings.
