Red Lion Spicy Foods Logo Venison Chili #1

 

3 lbs. ground venison
1 32 oz. can crushed tomatoes
1 14 oz. can diced tomatoes
1 6 oz. can tomato paste
2 large yellow onions, diced
6 stalks celery, diced
1 large sweet bell pepper, diced
2 12 oz. bottles of beer (we use a Pennsylvania lager)
1 14.5 oz. can beef broth
3 15 oz. cans light red kidney beans
2 bay leaves
1 package Red Lion Spicy Foods Company Chili Mix - Zesty, Zippy or Zany

 

Brown venison in a large pot, drain and set aside.
Cook vegetables with a little olive oil, about 5 minutes or until tender.
Add the meat and all other ingredients, except the beans, to the pot.
Bring to a boil, reduce heat and simmer for one hour.
Drain the beans and add to the pot. Simmer an additional two hours.

 

Makes about 12 cups, and freezes very well.
