Red Lion Spicy Foods Logo Venison Chili #2

 

3 lbs. ground venison
2 pcs. Cajun Sausage, casing removed
1 32 oz. can crushed tomatoes
1 8 oz. can tomato sauce
1 6 oz. can tomato paste
1 large sweet onion, diced
6 stalks celery, diced
1 large sweet bell pepper, diced
1 14.5 oz. can chicken broth
1 14.5 oz. can beef broth
1 32 oz. can light red kidney beans
2 bay leaves
8 tbs. Red Lion Spicy Foods Company Competition Blend Chili Mix

 

Cook venison and sausage until browned, breaking up with a spoon as it cooks,
and remove from pot. Add vegetables and bay leaves to to the pot, with 1 tbs. of olive oil.
Cook until onions are translucent. Add the tomato products, chili powder and
stock to the pot. Bring to a boil, reduce heat and add the meat.
Simmer for one hour, then drain the beans and add to the pot.
Simmer an additional one hour.
