Red Lion Spicy Foods Logo Very East Texas Chili

 

3 lb. beef chuck tender, diced
1 lb. pork chop, diced
2 slices slab bacon, finely diced
1 8 oz. can tomato sauce
1 14.5 oz. can chicken broth
1 large yellow onion, coarsely chopped
2 Jalapeno chiles, coarsely chopped
4 cloves garlic
1 large red sweet bell pepper, coarsely chopped
1 28 oz. can pinto beans
8 tbs. Red Lion Spicy Foods "Competition Blend" chili mix

 

Cook beef, pork, bacon and 1 tbs. of the chili mix in a large pot over medium heat,
until browned, about 10 minutes. While the meat is cooking put jalapenos, sweet pepper,
onion and garlic in a blender or or food processor and puree into a smooth liquid
and add to pot. Add the tomato sauce, broth and 5 tbs. of the chili mix to the pot
and simmer on low heat for 1 1/2 hours.
Add the beans and 2 tbs. of the chili mix and simmer for an additional 45 minutes.
Serve with flour tortillas, scallions and cheddar cheese.
