Red Lion Spicy Foods Logo Where There's Smoke...Chili

 

3 lbs. chili grind beef (use regular ground beef if chili grind is not available)
1 lb. chorizo sausage, cooked then diced
2 14 oz. cans fire-roasted tomatoes
1 8 oz. can chipotles in adobo sauce, remove chiles and mince
1 10.5 oz. can chicken broth
2 10.5 oz. cans beef broth
4 poblano chiles, minced
1 large sweet onion, minced
1 package Red Lion Spicy Foods Chili Mix - Zesty, Zippy or Zany
2 tablespoons cumin

 

Remove casing from sausage and brown in a stock pot, reserving fat.
Add the beef to the pot and brown, then drain, reserving 1 TBS of fat. Add the fat back to
the pot, then add the vegetables and sweat over medium heat until the onions are translucent.
Add the tomatoes, chipotles, broth and the chili mix to the pot. Return the meat to the pot, bring to a boil, reduce
heat and simmer for 90 minutes. Add the cumin and simmer for an additional 45 minutes.
Add additional stock if chili is too thick, and season with salt if necessary.
Serve with flour tortillas, scallions, cheddar cheese and pickled jalapenos.
