Red Lion Spicy Foods Logo Wild Card Chili


3 lb. chili grind ground beef* (if available)
1 lb. ground pork
2 12 oz. cans stewed tomatoes
2 cups beef broth
1 large yellow onion, diced
1 red bell pepper, diced
4 cloves garlic, minced
8 oz. tomato juice
2 TBS. red wine vinegar
2 Jalapeno chiles, pierced but whole
2 28 oz. cans pinto beans, drained and rinsed
1 package Red Lion Spicy Foods Zesty(mild), Zippy(medium) or Zany(hot) Chili Mix


Brown beef and pork in a Dutch oven until no longer pink, remove from pot and drain.
Reserve 2 TBS. of the fat, and return to the pot over medium heat. Add the vegetables and
cook until the onions are translucent, about 5 minutes. Add the tomato juice, tomatoes, broth,
vinegar, meat, jalapenos and the chili mix to the pot. Stir well, bring to a boil, then reduce
heat to low and simmer for 90 minutes. Using a slotted spoon, squeeze the jalapenos to extract
the juice into the pot, then discard the chiles. Add the beans and simmer an additional 45 minutes.
Serve with flour tortillas, scallions and cheddar cheese.


*Most grocery stores and butcher shops can do chili grind. It's simply ground beef run through the largest
plate on the meat grinder. Just ask!
