Red Lion Spicy Foods Logo Yellow Jacket Chili

 

2 lbs. ground beef
1 lb. ground hot sausage
4 stalks celery, coarsely chopped
1 large onion, coarsely chopped
1 large red bell pepper, coarsely chopped
3 cloves garlic, minced
2 28 oz. cans crushed tomatoes
2 14 oz. cans light red kidney beans, drained - reserve liquid
2 14 oz. cans Great Northern beans, drained
1/3 cup yellow corn meal
1 package Red Lion Spicy Foods Zany Chili Mix
1 tsp. Mexican oregano
1 tbs. cumin
1 tsp. basil
1 tsp. celery seed
2 tbs. cayenne powder
3 tbs. Red Lion Spicy Foods 20 Pepper Hot Sauce
1 chipotle chile, slit open and seeds removed
1 tbs. sweet Hungarian paprika
2 serrano chiles, pierced but whole
1 tbs. granulated brown sugar
2 12 oz. bottles of beer
juice of 1/2 lime

 

In a large pot, brown beef and sausage over medium-high heat. Drain off fat.
Add bell pepper, onion, celery, and garlic. Cook for 10 minutes.
Reduce heat to low, blend in tomatoes and spices (except brown sugar), simmer for 15 minutes.
Stir in drained beans. Mix reserved bean liquid with corn meal until it forms a batter.
Mix batter into chili, simmer for 2 hours.
Remove the chipotle and serranos. Add brown sugar and lime juice, simmer for an additional 15 minutes.
