Red Lion Spicy Foods Logo Zydeco Chili

 

3 lbs. ground turkey (85/15 if available)
1 lb. Cajun sausage, casing removed
2 14 oz. cans Rotel Diced Tomatoes with Chiles
1 8 oz. can tomato sauce
1 medium purple onion, diced
4 stalks celery, diced
1 large red bell pepper, diced
1 large Poblano chile, diced
1 32 oz. container chicken broth
2 tsp. Louisiana-style Hot Sauce
1 14 oz. can pinto beans
1 14 oz. can black beans
1 14 oz. can kidney beans
1 2.25 oz. package. Red Lion Spicy Foods Company Chili Mix - Zesty, Zippy or Zany

 

Brown ground turkey and sausage in a large pot, breaking up the sausage with a spoon.
Remove meat from pot, drain and reserve 1 tablespoon of fat.
Put reserved fat back into the pot and add the vegetables. Cook until vegetables are tender,
about 10 minutes. Return meat to the pot, and add all remaining ingredients except the beans.
Bring to a boil, reduce heat and simmer for 1 hour.
Drain and rinse the beans and add to the pot. Simmer an additional 1 to 2 hours.

 

Makes about 16 cups, and freezes very well.
